Stir Fries

Fried Chicken Cashew Nut (1 person)


50g sliced chicken breast
Handful of cashew nuts
1 small carrot, thinly chopped as you like
1/2 large onion, diced into chunks
2 garlic cloves
2 large dried red chillis
2 spring onions, washed and cut into 2 inch sections
1/2 tbsp fish sauce
1 tbsp oyster sauce
1 tsp palm sugar (softened)
1/2 tbsp dark soy sauce
2 tbsp water
Jasmine rice
Cooking oil

  1. Using a wok, fry the cashew nuts is oil until just browning, set aside and drain on paper towel
  2. In the same pan add the chicken, garlic, chilli and stir until almost cooked
  3. Add all the vegetables (except spring onion), cashew nuts, and drop of water to stop things catching
  4. Add palm sugar, oyster sauce, soy sauce, fish sauce and stir for a couple minutes, adding water if needed
  5. Throw in the spring onions and turn off the heat
  6. Serve with jasmine rice
